Get rid of those blues with Banana & honey cupcakes with blueberries!
Delicious, sweet, moist banana cupcakes with blueberries! They make any ‘not so good’ day that much better! Moderately nutritious too! Also, bananas blend really well with natural sweeteners like honey or maple syrup, so you can leave borrowing that cup of white sugar from your friendly neighbour to another day.
Banana & honey cupcakes with blueberries!
Ingredients: 3 large ripe bananas, mashed, 150g brown sugar, 90g honey, 60g butter, 225g self-raising flour, 1 tsp baking powder, pinch of salt
Steps: Preheat the oven to 175 degrees Celsius. Line 12 x muffin hole tins with baking cases. In a large bowl, combine the mashed bananas, honey, sugar and melted butter. Beat with an electric whisk until well blended. Mix in the flour, baking powder and salt with a wooden spoon. Spoon the batter into cases and bake for 20 minutes or until a skewer inserted through the centre comes out clean. Remove tins from the oven and allow to cool for 5 minutes before transferring to a wire rack.

Tip! To add a bit of crunch to your cupcakes, add 150g roughly chopped walnuts, when you add the flour to the mixture.
