Asparagus and Shrimp Yogurt
This healthy salad recipe is delicious and easy to make - the perfect snack for the summer months ahead!
Ingredients:
200g Asparagus
8 Strawberries
10 Shrimps
40g Corn kernels
1 cup of Yogurt
Seasoning:
1 tablespoon of Lemon Juice
1/2 teaspoon of Sugar
Method:
1) Wash and water blanche the asparagus and then soak in ice water until cold; drain and set aside.
2) Section asparagus; discard the tips.
3) Dice the stalk of asparagus.
4) Wash strawberries, section and set aside.
5) Mix lemon juice and yogurt; add diced asparagus, shrimps, corn and mix well.
6) Serve cold and enjoy!
