at Lara’s… Low-fat Pear and Ginger Cake with Almonds

I had a couple of pears lying around – and I didn’t feel like having pears (in itself) anymore so, I decided to improvise on a basic cake mix. Here’s what I came up with…


A low-fat snack for any time of the day that’s quick to do. The main ingredients are pears, ginger and yoghurt but I’ve added almonds for an extra bit of crunch. Do also refer to the ‘tips’ section below for variations of this recipe. Enjoy!

What you need:
1 cup self-raising wholemeal flour
1/4 cup brown sugar
1/2 cup low-fat plain yoghurt
1 teaspoon baking powder
2 eggs
2 tablespoons butter
1 ripe medium pear – peel and cut into 1/4" chunks
1 ripe medium pear – pureed
4 cubes/pieces of crystallized or non-crystallized ginger – roughly chopped
(Optional) A handful of slivered almonds – toasted if you like

What to do:
1…Preheat the oven to 160/320F
2…In a large bowl, whisk the pureed pear, sugar and eggs until smooth. Then whisk in the butter and yoghurt.
3…Add in the flour, baking powder and stir until just blended
4…Add in the cubed pears, chopped ginger and slivered almonds – mix well
5…Pour into a standard-size non-stick loaf pan. Bake for 40 to 45 minutes. Insert a skewer or knife through the center – its done when it comes out clean
6…Cool on a wire rack. Slice and enjoy!


Tips…
…wholemeal flour may be substituted with all-purpose flour
…instead of yoghurt, you may opt for an extra 2 tablespoons of butter and 1/4 cup of milk
…if the pears aren’t very sweet or you have a sweet tooth, use an additional 1/4 - 1/2 cup of brown sugar

I love cheese and also like to try new ways of eating them but hadn't tried deep-frying them until I came across this recipe. The heat of the oil softens the cheese considerably which contrasts really well with the crunchy crisp breadcrumbs - simple and delicious
