Tuna Rice Casserole

June 28th 2008 08:51
This is one of my favourite recipes. When I first met my husband he always told me, he hated tuna. Then I made him this and he loves it. My one year old will eat it too!

You need:
2 Tablespoons of butter
1 clove of crushed garlic
1 onion diced
˝ cup of broccoli chopped finely
1 Tablespoon of flour
1 cup of milk
˝ a cup of grated cheese
2 eggs
425g canned tuna, drained
2 cups of cooked long grain rice

Pre heat oven to 180 degrees.

Melt butter in a saucepan over a low heat (this is like making a white sauce you need to melt it carefully so that it does not burn). Add onion, garlic, and broccoli, and cook until the onion is clear. Continue stirring as you add flour. Add milk slowly, while stirring continuously. Continue stirring until mixture is thick. Remove saucepan from heat. Stir in eggs, cheese tuna and rice. Pour combined mixture into an ovenproof dish. Place in oven for 20 minutes or until golden.

Rose and Mint Tea

I'm not usually a tea drinker but was served a rather nice cup of Rose and Mint tea while over at a friend's place a couple of nights ago which I thought I would share with you all

Spinach soup

Spinach soup

Look at that dark green goodness! Like a swamp, but more green, clean and sweet-smelling! This Spinach soup was surprisingly very quick to make and actually full of flavour! I think I have found my new calling in life! “To maketh soup of the thicketh variety by blending ye vegetables”. But do you want to know the best part! Well, I have recently worked out that my daily vegetable intake can be very sad indeed, but if you drink soup which is almost 100% vegetable, then that makes getting your daily serve of vegetables a cinch! When you cook this soup, you will also realise that spinach leaves shrink A LOT during cooking, so use a big bunch of spinach!

Make your own BBQ sauce

June 18th 2008 00:44
BBQ ribs delicious I want to eat them now
One of my big issues with the bbq scene here in Sydney is that there's not the same kind of love and care that you might find in other countries. I've written an article before that got attacked by furious Australians, claiming the bbq here was the 'best in the world', but I can only speak from my own, admittedly limited, experience.

Recently, I've found a farmer's market in Rozelle where they do a great bacon & egg roll... the eggs are farm fresh and the bacon is - get this - port-cured bacon. That's what I'm taking about

Chocolate pizza fun!

Chocolate pizza
Chocolate pizza

Yes the chocolate pizza may not look like much to the unknowing observer, but do not be fooled! It is an absolutely delicious concoction! A must have for the chocolate lover! And so easy to make, that even the kids can do it! I think it is basically every kids dream. Chocolate and marshmallows on a pizza! Who wouldn’t want to try a piece!? I think even the most sceptical would take a bite. I think the bananas are an essential part of the chocolate pizza as the banana taste seems to somewhat counteract the *too much sugar* possibility, however, another good alternative is to use strawberries when they are in season. Pizza never looked so sweet!

Banana and date bread

Banana and date bread
Banana and date bread

Mmmm… Delicious Banana and date bread! The perfect snack for morning or afternoon tea! What I found most amazing about this recipe is that it does not contain any butter or oil! Instead it uses milk as the *mixing agent*, so it is indeed of the healthier variety! I love bread and toast! Especially when it is thickly sliced! I’m not really sure why exactly that is, but I think it might have something to do with *fat toast* being both crunchy and soft at the same time, whilst very thin toast tends to get very dry very easily. Either way, when it comes to banana bread, thick slices are definitely the way to go! This banana and date bread also tastes great (if not better) the next day! Especially when toasted and buttered! My tastebuds are tingling in anticipation!

Hamdog and Luther Burger Photos

June 13th 2008 03:22
This story extracted from the great post on Texas Burger Guy.

The mistake most people make when creating the world's most dangerous burger, is that they stay firmly entrenched in the status quo. They're afraid to think outside the box. That's why it took a visionary like Luther Vandross to come up with the next logical evolutionary step in hamburger science

White chocolate and mixed berry muffins

Are you in need of a bite of chocolatey goodness? A bite of warm, soft berry muffin goodness with bites of white chocolate? If this sounds like you then keep reading, because today is the day of delicious White chocolate and mixed berry muffin goodness! Muffins the quintessential baked good combining the tart taste of berries with sweet chocolate is a divine combination. I love eating muffins when they are baked fresh and still *steaming* a bit! Garlic King Prawns

Here in Oz, we're famous for our love of shrimps and why wouldn't we? They're damn tasty and we're also lucky to be blessed with a large variety of them not to mention how fresh they usually are at the markets

Cherry almond loaf cake

Cherry almond loaf cake
Cherry almond loaf cake

ARGH! I have an exam tomorrow! And despite actually studying fairly well for this one, I seemed to have picked up that last minute bug of “*gasp*! I know nothing! What do I do! What do I do!” Yes the old last-minute-exasperation-impe nding-doom bug is very contagious, springing from absolute thin air! It probably doesn’t help that the weather is currently so wet and glum, I feel like I could bottle it up, and release it on the Sahara dessert to cause flash floods, but there you go.
