Did you know that when you are stressed, you naturally choose foods that *crunch* to help you de-stress? Well from this fact I have deduced that I must be somewhat stressed because by mid-afternoon I am really craving a snack which has a *crunch*! Yes, I am indeed less partial to cake at the moment (which is a h-u-g-e breakthrough for me); and yet sadly I do not appear to be turning rake thin anytime soon (but that’s beside the point). So to help fix this craving, I invented some nifty little Sweet chilli and cheese pastry spirals! Very quick and easy to make, and when you eat them after they have been freshly baked they have the best crunch as well as taste! They are so easy to munch on, that it is very easy to eat a whole batch by yourself, so WATCH OUT! Otherwise before you know it… “hello”… plate full of crumbs!


Sweet chilli and cheese pastry spirals

Ingredients: 1 sheet of ready-rolled puff pastry, 50g parmesan cheese grated, 2 heaped tbsp sweet chilli sauce

Steps: Preheat oven to 220 degrees Celsius. Spread the sweet chilli sauce over the puff pastry (trying to go as close as possible to the edges), sprinkle with the parmesan cheese then roll the pastry up tightly. Brush the edge with water to get the roll to stick together. Use a sharp knife to cut 1cm segments then place onto a baking tray lined with baking paper. Bake for 12 minutes or until lightly golden. Serve hot!

What are these patty cases worth to you?

Are supermarkets forcing specialty stores to close? Or are those *big-chain* supermarkets just giving consumers more for their money? Or are specialty stores just overcharging us? I’m not sure. But what I do know is that there is HUGE price difference which is very real! For example, these mini patty cases which are commonly used for baking cupcakes cost just over $1.50 in supermarkets but exactly the same patty cases in another baking specialty store cost upwards of $5! That’s like a 300% difference! It’s unbelievable!

Spicy tomato and fennel soup

With these cold winter days giving everyone a chill, its time for some comforting wholesome food! And nothing beats a mean soup! Especially when it is of the thick, flavoursome variety, like this Spicy tomato and fennel soup! Roasting the vegetables in the oven really brings out a lot of flavour in the soup, making it that much more delicious! I can safely say before making tomato soup, I had some doubts on how tasty such a soup could be. ‘Would it be one of those soups that looked exciting because of its colour but then turned out to be bland?’ This was one of my worse fears. But “post-soup making” I can happily say that this is a v-e-r-y delicious soup, which I will definitely make again!

So in the past I’ve made the original cherry clafoutis, but this time I just felt like a *bit* of a change, so I decided to test out the chocolate version. It is much the same in terms of the texture and cherry goodness, except this time there is that hint of chocolate, which I think really complements the cherries! But what I’ve really come to love most about this dessert is how it is positively one of THE most easy desserts to make and yet, once dusted in icing sugar it looks absolutely divine- as if one has spent hours laboriously at work in the kitchen. The only thing you have to watch out for is that you don’t overcook it (so don’t forget when you put it in the oven). Otherwise, it’s not bad, not bad at all!

*drum roll* Legendary bars (I know! Talk about pressure) based on the first American chocolate chip cookie recipe! I would have thought that the first chocolate chip cookie would be rounder and generally more “cookie” shaped, but it would appear that that isn’t the case! Even so, these tollhouse cookies are deliciously soft, in that “traditional-wholesome-cookie” kind of way and a real treat for all! This recipe uses both caster sugar and brown sugar, and I’ve noticed before that when I glance at an ingredients list, it is easy to skim and miss things! So make sure you remember to add both of the sugars! Other than that, it’s a piece of cake! Or more literally, a slice of cookie!

A bakery runs on the honor system

Perhaps people wouldn't bake so much at home if bakeries were a little more reasonably priced. I like the Sonoma bakery in Glebe, but at $7 for a loaf of sourdough rye, I'd be better off just mixing flour and activated yeast in my mouth and swishing it around.

This simple salad recipe is delicious and very easy to prepare. The crunchy texture of the green papaya and peanuts contrasts well with the cherry tomatoes while the fish sauce in the dressing provides plenty of zest
