I have a confession. Usually I’m not really a “peely person”. By this I mean, I generally dislike eating peel chunks in anything! I am one of those people that will pick out every little tiny piece of peel from their fruit loaf, in an effort to be “peel-free”. I do still use grated orange and lemon peel in dishes when required, (as what you can’t see won’t hurt you), but generally I try to stay away from anything with the word “peel” written all over it.

Raw Beetroot Salad with fetta and pear
Everyone who is anyone who has heard of beetroot, knows that this ominous word brings to mind one thing, pinkish-red stains (and lots of them)! Needless to say, when it comes to stand alone dishes, “the beetroot” rarely appears, except for in burgers or salads. Well today, marks the beginning of a new day, with this delightful Raw Beetroot Salad with fetta and pear!

Spinach and Ricotta Quiche
A family favourite for many reasons, quiches rarely disappoint. They are delicious, filling, nutritious and economical, and this Spinach and Ricotta Quiche definitely fits the criteria! It is simple and fast to make, and yet amazingly tasty! It is also vegetarian-friendly! I used a filo pastry case to make the quiche lighter, however you could always use a more dense pastry if you wished. Mmmmmmm.. hot quiche goodness bursting with spinach and cheese flavours! Yum!

Strawberries and cream ice-cream!
This is one of my most favourite ice-creams in the WHOLE WIDE WORLD!! I l-o-v-e how it has real strawberry pieces melded in with the vanilla ice-cream! It’s so delicious! It just tastes like such an authentic ice-cream, with rich vanilla ice-cream merged with strawberry pieces!

Farfalle with grilled aubergine and zucchini
This is a delicious vegetarian pasta! It is fresh and light, and thus can also be served as a side dish too! It has a mild lemon dressing, which gives it a tiny tang, but goes really well with the vegetables and herbs; and because it isn’t cream-based you don’t get that heavy, sinking feeling after you eat it either!

“Tomato sauce? Huh?!” I here you exclaim! Yes Tomato sauce! I am referring to the authentic type which you make by yourself by slowly cooking tomatoes, as opposed to the bright red one which comes ready-made in sachets or bottles.

You know how sometimes you just feel so unhealthy. Usually this pivotal moment hits after you’ve gorged yourself on fifty mini Easter eggs or a bar of chocolate and then you’ve finally realised that you’ve eaten the whole pack in one sitting. The keyword being sitting, because that’s right, you forewent your exercise to sit back and eat that chocolate. And then you probably basked in some self-pity! *slap* Get your act together you tell yourself!
