I l-o-v-e bacon! This is actually quite a filling salad! Must be the combination of greens with delicious bacon and feta that does the trick! If anything, this salad reminds me of a Caesar salad minus the cos lettuce and croutons and parmesan and salad dressing. Yes. So in actual fact it doesn’t really resemble a Caesar salad at all. The only real similarity is the bacon, which I love! But I already mentioned that! Oh well! Anything that makes me eat more greens should get a star I say!


Baby Spinach, feta and bacon salad

Ingredients: 2 tbsp vegetable oil, 3 rashes of bacon, 80g baby spinach leaves, 50g snowpea shoots, 2 tbsp white wine vinegar, 1 tbsp raw sugar, 2 tbsp extra virgin olive oil, 100g kalamata olives, 100g feta

Steps: Add the oil and bacon to a medium pan and cook until the bacon is crispy, the cut roughly into pieces. Toss together the baby spinach, snowpea shoots and olives. Whisk together the vinegar, sugar and olive oil, then pour over the salad and toss. Crumble the feta over the salad and add the bacon then toss and serve!
Toss!


And toss the salad again!

Serves 2

Delicious zucchini spirals full of twirly fun!! The filo pastry makes them nice and crispy when fresh and I have to say, that zucchini rarely tastes better than this! As you all know, zucchini’s do have the tendency to be a bit bland to say the least, or unexciting at the most, but when twirled up in a spiral they definitely seem more appetising!

And why is it all bright? Because of the moon shining down on the glorious Earth! So why not glorify the moon with delicious crescent shaped Greek Almond Biscuits! They are sweet and delicious and filled with almond goodness! No really! You just can’t stop at one! They are also ideal to give away as gifts! Simply bottle them up in a jar for that cookie-lover-of-a-friend! So simple and yet so delicious! If I could give biscuits *star ratings* this recipe would definitely get FIVE stars!

Galette? Galette? Yes! Would you believe that the definition to the word “Galette” does not even appear in dictionary.com! (I was rather surprised.) So even if you aren’t exactly sure what a galette is, you can be reassured that they are indeed delicious! They are a friendly step away from the humble apple pie, and less saucy than a danish; the apple galette can be described as a light, flakey pastry version of the many apple pastries available! It is characterised notably by its round shape and arrangement of the apple slices.

MMMmmmmmm…. The delicious smell of freshly baked cookies wafting from the oven! Oh how I have missed this smell! Especially because the past hot weather has made the idea of baking particularly gruesome! Good thing a cold front came in just in time for me to bake a few batches of Christmas cookies!

I always associate stars with Christmas time, but I guess you could make these biscuits at any time of the year. Stars are much more fun to eat than just plain circles because you can bite off each of the points first! Haha. The icing is an essential addition to this almond shortbread biscuit, not only for its colour, but for its delicious sweetness! Yum!

O-M-G! So I do realize that so far almost all my posts involve me cooking and a subsequent recipe following, but I just had to make a mention of these darling patisserie pink cup cake dishes I bought the other day! They’re so cute! *gushes* And they come in a variety of other colours including lilac, mint (green), blue, and white. Don’t you have visions of these cute little dishes carrying delicious cupcakes!? They’re perfect cupcake size too!

They make a very cute gift for friends who like to bake too, which is handy since Christmas is only 17 sleeps away! You can find them at your local kitchenware store, but if you’re a computer whiz check out the Maxwell and Williams Site, which gives you access to their whole range. Unfortunately you are not able to purchase any items online as of yet, but I’m sure it will all be up and running all too soon.

Okay! I’m not even sure whether this counts as cooking, but hey, it’s delicious and hence deserves its place in cooking recipe history! What am I referring to? Bocconcini and Tomato Salad to be specific. So simple to make! No *actual* cooking involved, not even the tossing of the salad! I KNOW! Who ever heard of a salad which did not require tossing?! Well you have now! This dish requires what could be termed*artistic arrangement*!

It is best eaten fresh, made on the spot so to speak, otherwise the dressing can tend to make the tomatoes a tad soggy. But it does look a million dollars considering the little effort required!
