Rainbow Melon Salad

Rainbow Melon Salad

Aah! The ol’ Melon Salad! Possibly one of the most colourful and refreshing things you could possibly eat on a hot summer’s day! *Melon-ball-ing* is surprisingly therapeutic as well! Haha

Don’t worry if you haven’t made melon balls before because it isn’t that hard! Basically all you need is a melon-ball scoop. It is best to approach the melon from an angle, press the scoop in firmly before turning it in a circle to make the ball. If you’re a born *ice-cream-scooper*, then eradicate all ice-cream thoughts pre-melon-balling, because it is a completely different technique! It is also much easier to Melon-ball with firmer melons such as rockmelon and even honeydew as opposed to water-melon, which can tend to crush if you’re not careful.

It takes a few melon-balls to get into *the zone*, but after that, it’s a cinch to get those perfectly rounded melon balls! And then its Rainbow Melon Fun Time for Everyone!

Rainbow Melon Salad

Ingredients: watermelon (red), champagne watermelon (yellow), rockmelon, honeydew

Steps: Using a melon ball scooper, scoop balls from the rockmelon, honeydew and watermelons and combine in a bowl. Serve fresh or with ice-cream!

Tip! Use seedless watermelons if possible as no one wants to be picking out seeds during the rainbow melon fun time!

Rosewater cupcakes with pink glaze icing

Rosewater cupcakes with pink glaze icing

Some days are just cupcake days! And today is one of them! I’ve felt like eating pink cupcakes for over a week now (as well as skipping in meadows, I know, it’s a bit random). Anyways, so today I relented and decided to make a batch (because after all it is easier to bake cupcakes than it is to find a meadow in Sydney)! Haha.

Mango Breakfast Danish

As we all know by now, summertime is synonymous with mango season, and what better way to start your perky summer day than with a Mango Breakfast Danish. Simple to prepare and delicious to eat! I have to admit I have never actually seen a Mango Breakfast Danish being sold in le shops, but when the idea came to me I thought to myself, ‘surely it can’t be that hard’. I was a bit hesitant at first about the whole “baking the mango” idea, with visions of mango explosions in the oven due to the wet nature of mangoes constantly popping into my mind. However I’m happy to tell you all that no such explosions occurred and that mangoes in fact cook well, and do not become a soggy mess as I was worried about. If you like mangoes and pastry then this is a match made in heaven!

Aah! Nothing better than a simple salad on a lazy Summer day. I swear during the past few days which were truly unbearably hot, I almost contemplated throwing out the oven, because goodness knows, its almost impossible to bake anything when you are dying from the heat. However I came to my senses before any harm was done to any appliances, and decided to make something which did not require baking.

Hearty Blueberry Muffins

Blueberry Muffins
The humble old blueberry muffin! One of the safest muffins to make, practically foolproof, and filled with delicious blueberry goodness. It takes about 5 minutes to whip together all the ingredients and then half an hour of baking before you are greeted with the pleasant aroma of freshly baked muffins! If you like your muffins *bursting with fruit*, then I would probably recommend adding another half cup of blueberries to your mixture, ‘just to be safe’.

On a completely random note, I have discovered that eating frozen blueberries is really great during the hot summer nights. Each blueberry is like a sugary ice-hit, without all the artificial sweeteners present in ice-blocks, and it’s healthy for you too! *high five* Aah! The old blueberry! Just can’t get enough!

Who would be able to pass up waffles titled “Alice in Wonderland” as a kid? I sure couldn’t! And that’s probably the reason why they always name delightful desserts targeted and children names like that! But take a look at that waffle! How good does it look! Hundreds and thousands really will perform miracles in making food child-friendly! Well.. maybe not vegetables.

Chocolate Cheesecake Brownies!

So everyone has been asked at some point, “what is your favourite food?” To which you usually have to “aah” and “ummm” as your brain tries to sort out the argument in your head of ‘which is your most favourite food in the whole wide world’. I guess with so many different tastes out there, it is hard to just pick one. Usually you come up with a few favourites quickly, but no definitive, ‘the one’, action happening!

Choc-chip slice squares!

Have you got a chip on your shoulder? Maybe you fell over whilst walking on flat ground and everyone turned and gave you a look and made you feel like a fool? Maybe you fell off a seat on the bus when you were half asleep and everyone around you laughed? Or maybe you think your course coordinators have it in for you, and are determined to make it hard for you, no matter what? If any of these apply, then maybe you need a Choc-chip slice square! It is loaded with ‘chips’, so maybe you’ll be able to relate! Haha

No rain drops, just Jam drops

Jam drops!
Jam drops!

Whose been doing the rain dance at home, because it’s pouring down buckets on this side of town! Rain dance people, please stop, go inside and do something more productive than bringing rain, such as baking up some jam drops. I guess the jam in the cookie “sort of” looks like a drop (if you use your imagination), and hence the name “jam drop”.

Tabouli

Tabouli!
Tabouli!
I think I first ate Tabouli some time last year. And the only reason I decided to try it was because one of my friends a-d-o-r-e-s eating it. Turns out, I was actually surprised at how much flavour it packs in! Sometimes you see the tabouli just sitting there in shops, looking a bit lonely, a bit dehydrated, a bit wilted,.. even sad ..that is if vegetables had feelings. And all this negative vegetable energy is unlikely to make you think “Wow I want to try that!”. However, if you do make Tabouli yourself, it really does taste fresh and flavoursome! The way it was meant to be!

There’s an entertaining story about the origin of Tabouli here. I’m a bit dubious as to its authenticity and credibility, hard to imagine Caesar and Cleopatra fighting over the name of a salad, but hey, it’s interesting nonetheless.

*Pinch and a punch for the first day of the month* So today is indeed the 1st day of November and also the day after Halloween. I think we had just a handful of trick-o-treaters yesterday… which is kind of sad and non-fun really.. Why can’t Halloween be big in Australia!? Why? Goodness knows the more holidays the merrier!
